Oregon Sugar Pod Peas

The garden is producing!  The Oregon Sugar Pod Peas are doing very well, and I am picking many every day.  I like that these are easily frozen for the off-season. I only have to blanch them for 2 minutes, put them into ice water to cool for 2-3 minutes. Then I drain them and dry them on clean kitchen towels. When that is done, I put them onto a cookie sheet and place in the freezer. About 2 hours later they will be frozen. Finally, I put them into freezer bags...and into the big freezer they go. I like that these can be sauteed without thawing...into the right size for your needs. Simple and easy...no hot canner and long hours putting these up.
