I visited a farm stand today, and saw these pretty winter squash. I decided to get one to try. If I like it, the seeds will be saved for next year. This is the information I found about it...interesting background.


Description/Taste


Red Kuri squash is a hubbard squash variety with a classic pear or tear drop like shape. It is in appearance similar to that of the classic hubbard only much smaller weighing on average only three to four pounds. Its exterior skin is smooth with a vibrant orange hue and oftentimes will be lined with faint vertical ridging. Its skin is hard and thin though similar to the delicate squash once cooked is edible. Its flesh is creamy yellow and when cooked offers a smooth texture and sweet squash flavor that is reminiscent of chestnuts.

Red Kuri squash is available from early fall into mid-winter. 

Current Facts


The Red Kuri squash, botanically classified as part of Cucurbita maxima is also known as Climbing Onion squash, Hokkaido squash, Uchiki Kuri squash in its place of origin (Japan), and Potimarron squash in France. It is a hubbard type squash and sometimes also referred to as a baby red hubbard type since its appearance is like that of a petite hubbard. The word “kuri” translates to mean chestnut in Japanese, the main flavor profile found in the Red Kuri squash. 

Nutritional Value


Red Kuri squash is a good source of vitamin A and vitamin C as well as potassium and iron. 

Applications


Hard-skinned Red Kuri squash can be difficult to peel and are most easily cooked in their skin. Split squash in half, scoop out seeds, and roast, cut-side down until tender. Red Kuri can also be cut into wedges or cubes and roasted. The skin of Red Kuri once cooked is tender enough to consume so need not be removed prior to eating. Add cooked squash to soups, risotto, stews, and curries. Grate flesh and bake into gratins or casseroles. Pureed squash can also be used in sweet preparations such as bread pudding, pies, beads, muffins, and tarts. Red Kuri squash is also ideally sized to be halved, hollowed, stuffed, and baked. Its flavor marries well with onion, bay leaf, fresh herbs, leeks, dried cranberries, white beans, mustard greens, maple syrup, curry powder, roasted fennel, pecans, cinnamon, nutmeg, goat cheese, parmesan cheese, and olive oil. Uncut Red Kuri squash will keep in cool, dry storage for several months. 

Ethnic/Cultural Info


In France the Red Kuri is known as Potimarron which is a combination of the French words for pumpkin (potiron) and chestnut (marron), a nod to the squashes chestnut like flavor. In Germany the Red Kuri is known as Hokkaido, a name given after the Japanese island where the Kuri was first developed. Prior to the arrival of the Red Kuri (Hokkaido) squash in Germany winter squash was relatively unknown in German cookery. Since its introduction winter squash has become an important part of the culinary culture in Germany and has grown to include several American varieties as well, though the Hokkaido remains still today the most popular variety there. 

Geography/History


Red Kuri squash is native to Japan and was developed using a hubbard squash which was brought over to Japan in 1878, recently after Japan opened up to international trade. The Red Kuri was developed on the island of Hokkaido which bred the American hubbard to be smaller, thinner skinned, and to have a nuttier flavor. Today Red Kuri squash is popularly grown in Japan, Germany, France, Holland, England, and the United States. Red Kuri squash thrives and full sun and should not be planted outdoors until the risk of frost has passed for the season. Squash are typically ready for harvest within ninety-two days of planting and can be cut from their vines with a knife. Be sure to leave at least two to three inches of stem on the squash as this will assure the squash has a long shelf life.

Pick up the guitar for a few minutes, stop and take photos of the field that no one else notices, pull over and stop to get that tea that always makes you happy when you drink it, look up that old band you used to love and find some of their songs, find a magazine at the library about that hobby that you gave up, or a biography about that person that you admire. Honor and feed your you-ness.

We live in a world that tries to make us all the same when there are little things that make us so very different. Honoring and doing THOSE LITTLE THINGS are the things that will truly make your heart sing.

Thank you for being the distinctive soul that you are. You make the world more colorful, more fun, more unique and more interesting. Don't let anything dull your colors or dim your light. The world needs you in all of your vivid color.

Zucchini Relish

I am canning zucchini relish today and this is a good recipe. It is much better than cucumber relish.


Grandma’s Zucchini Relish Recipe

Yields: 8-9 pints (depending on the size of the zucchini)

INGREDIENTS:

10 cups zucchini
3 cups onions
4 red bell peppers
5 tablespoons salt
3 cups sugar
1 tablespoon cornstarch
1 teaspoon turmeric
3 cups vinegar
1 teaspoon dry mustard
1 teaspoon coarse black pepper
1 teaspoon celery seed

INSTRUCTIONS:

Relish boiling in a large stockpot

1. Grate zucchini, onions and peppers in a food processor. Place in a large bowl and add salt. Mix well. Cover and let stand at room temperature 8-10 hours. 
2. Rinse thoroughly in a large strainer and drain well. Use the back of the spoon to push mixture against strainer to release as much water as you can. 
3. Place zucchini mixture in a large stockpot and add remaining ingredients.
4. Mix well and bring to a boil.  Keep at a low boil for 30 minutes, stirring occasionally. 


5. Place in sterilized pint jars and process in a hot water bath for 15 minutes (adjust for altitude).

I just rented this movie. These are some of my favorite actresses, and of course I wanted to see them in this movie. It is about women of a certain age, that I qualify for... and I enjoyed their struggles and the story. This is a chick flick, and I think that men would not like this movie. I do!!

Vintage Sunny Yellow Descoware from Belgium

This photo is from a current ebay sale. They have it priced at $375. What? That price is outrageous!   My thrift store find was only a few dollars. I plan to use it as a soup pot. It looks great in my kitchen sitting on the stove!

The pot was made post WWW II, in Oudenaarde, Belgium. It was imported to the USA. Descoware became well known and was the creme de la creme of cookware. It seemed to be available to the US homemaker, and most had at least one in her kitchen.  This cookware is cast iron with enameled exterior. The interior has a patented "Glissemaille" coating that adds to the durability.

A vintage Descoware Sunny Yellow pot in excellent condition.  This piece is very rare, the same pot Julia Child had in her house (hers was Flame).  Julia raved about the cookware and that it was the best that she had. Sunny yellow is the vintage color Marilyn Monroe collected. It is marked on the bottom, " Descoware, Made in Belgium".

Is is 7 1/4" high, 8" wide at belly.  The cooking area: 5 3/4" deep, 6" wide at top, 8" wide at belly, 3 1/8" contact diameter at foot.  It weighs 5 lbs. 8 oz.

My junking paid off at a flea market. I scored this 1950's jug. It is in great condition...the enameled inside is pristine. I cleaned it well and it will be a good accessory for Prairie Flower.

New Bike Rack for Prairie Flower

I have been wanting a bike rack on Prairie Flower for a long.....time.  I look for them and just don't find one that will work for me. Last week I found just the one for my needs. It is a Swagman, and is on sale at Camping World.

The problem was that my trailer has this old time bumper, and every bike rack available will not fit it.  The RV Store in Springfield Oregon is my go to place for my vintage trailer. The man who owns the store has been in business for a long time and will work on my trailer.

The trailer had a custom welded bracket attached to the bumper, and welded stabilizers attached to strengthen the bumper.  The nice advantage is that I can remove the rack when I don't want it on my trailer.

I am happy to show it to you.

My 1963 Schwinn is in place, just the right bike for Prairie Flower.

Today, marks the end of an era here on my farm. For the first time in some 40 years I do not have livestock.

My Dexter herd went to their new home today.  It is about 3 hours from here. They will be kept together in a large pasture and receive a good life.

That was my goal, to keep them together and find a good place for them.

I believe to live with love, compassion, and respect in how I treat myself, others, and animals.

I found that I looking forward to the new situation. I hope for more peace in my home and less work from the care of cattle.

Farewell Bo and Daisy Mae. They have been here longest, and I am most attached to them. Adieu.

I am much better. I had to get that off my chest (so to speak). I had a few tears, and read some uplifting things last night.

I fell back into thinking that things would change. I didn't expect the cold reception that I got.  In fact, I know that I should not expect an old dog to change.

I was out and about the other day, doing my "thing".  A sales women who was in her 50's asked me if I was 55 yrs old. I was surprised! What a compliment! I said, oh yeah for the last 11 years....I'm 66. It was great, and made my day!

I didn't know whether to share this message today.
But I decided that I must, because it's important in life that we be authentic.

Right now what is authentic is to share some thoughts and reminders on dealing with life when it hits a low point.

For we ALL naturally hit low points from time to time. Es la vida (this is life).

I felt a small space inside of me whispering to remember the higher truths about life. 

The times when we MOST need to remember these truths is on the down cycle of the rollercoaster ride.

So here are a few reminders for now or for later, if you should ever find yourself hitting what you think is a low point that you can't cope with or won't recover from (or you're blessed to be the support person for someone in that space)...

  • You are allowed to feel how you feel. Feel to heal.
  • Life is change and part of change is letting go.
  • What you can't control is that way for a good reason.
  • Every end is also a new beginning. One chapter ends, the next begins.
  • An empty space (a gap or an unfulfilled need) can be seen as either a void or a vacum. A void is nothingness. A vacuum will naturally fill a blank space.
  • In truth, nothing is empty. Even what we may see as "nothing", is everything. This is the nature of love and energy, it fills every little nook and cranny of this miraculous world we live in.
  • We are ALL so much more than this current moment in time, more than our circumstances, or the events of our lives. 
  • We are all soul first, body second. With your heart look beyond the physical experience of your life, and FEEL the magnificence alive in everything you see.
  • As Kelly Clarkson sings, what doesn't kill you makes you stronger, and that strength is destined to be part of your unfolding life journey. It will serve to elevate you higher, that you may also perhaps elevate those around you as well.
  • All that really matters is that we are present, we are kind, we are loving.
  • Never let the low points in life harden your heart. We are here to keep open minds and open hearts, that life may flow to us and through us.
  • Buddha said... "with our thoughts we make our world." So during our low points, we must pay attention to the story we tell ourselves, and to always ensure we include light and love at the forefront of that story.
  • When all else fails, breathe and give yourself a hug. You are a truly divine being, and you are supported in ways you cannot even begin to imagine.

May light and loving vibes surround all of us this week!

He can home after two days in hunting camp. A miracle happened! It was the first time that I have witnessed a fleeting happiness in him in months.
