Glazed Lemon Zucchini Bread

OK, what is the big deal? This is a great recipe...and I have a new and delicious way to use the zukes ripening daily in my garden.

  1. The great thing with zucchini is they take on the flavor of things they are mixed with. My Mom was a great one to pickle things. She used her watermelon rind pickle recipe and used zukes in place of the rind. With the zukes cut in thick chunks, you couldn't tell the difference!
