Dutch Oven Cooking - Cheesy Potatoes

March Dutch Oven Cooking...I made these cheesy potatoes. A new recipe for me. I didn't take my usual photo while it was fresh in the pot. Here is a photo on a plate to show you. The potatoes were from my garden last summer, still very good after storage. The recipe is really good, and received many compliments. Yay, that's what every cook wants! 

Recipe for Cheesy Potatoes

8 medium Yukon Gold Potatoes, peeled and diced
1/2 stick margarine
1 can Cream of Chicken Soup
1 small onion diced
1 cup shredded cheddar cheese
1 cup sour cream
1 5 ounce can evaporated milk

Directions - Melt the margarine in the dutch oven, add all the ingredients into the oven and mix well. Cook at 350 for about 45 minutes to one hour, until the potatoes are done. Be careful with the bottom heat, this will burn if too hot.  Enjoy the Yummy!

Snow is Fun

Yes, snow is fun...sometimes. This vintage photo from pinterest caught my eye. The college women from a bygone time...wearing skirts.  Snow shoes are pretty difficult to use in this area, you see, we have very heavy wet snow. Heavy snow wears a person out in no time at all. If there is a packed trail, it isn't bad. I have never tried it, not so interested with our type of snow...we call it Willamette cement. Got the idea. Today we had a light snowfall, but there is none on the ground. Yay!! And believe it or not...I have a hummingbird feeder up, we often have a really early male Rufous Hummingbird...migration is going on, and there have been some birds along the Oregon coast.

For me, the answer is easy, a drive in my sports car. Top up or down, it doesn't matter....I smile. Yep, I grin with sheer delight. Yesterday, I took the cover off and backed out of the shop. I bundled up and put the top down...after all it was sunny and 63 outside. I keep the windows up and turn on the heater, I was just fine. I haven't driven her in almost 3 months.  I finally named her, Trixie. The car gets pretty good MPG, about 30. I saw some guys on motorcycles, a touch of early spring fever? You bet!

Taming the Marionberry Row Today

This is a photo of my Marionberry Row about June 1. Marionberry is a highbred berry, from three different berries. It is a product of Oregon State University in the 1950's. The fruit is excellent. The rows require work. One of the original berries used in the highbred is the native cascade blackberry. Thus, these canes need yearly work to keep them from overtaking a garden. All of these year old lush fruit bearing canes die during the winter, then they must be pruned out and the new canes (that are all over the place) must be put onto the trellis that I have here. The canes have very sharp thorns, and I use heavy leather gloves. Ouch! Even with leather gloves I always get some thorns thru them. Today, I wrestled, and pruned, and trellised the new canes. I usually do this work early after the snow is gone, on a nice day. I feel that a big job is accomplished when finished. YAY!

My oh my, I am thinking about this delicious dessert. I have made this with my daughter. The recipe is from one of Susan Branch's cookbooks. The chocolate shortcake is pretty easy to make...and with fresh, right out of the garden strawberries...........ahhhh. Yummy, Divine, Wonderful, Special, and Heavenly.

You see, I worked in the garden today. Cleaning out and pruning things, and I looked at my strawberry plants.....that started it. There is no strawberry from a store that tastes like mine!
